Easy GF Pumpkin Bread

So easy to make, and so incredibly delicious!

Prep Time: 5 min

Cook Time: 50 min

Makes: 1 Loaf

  • 400g of The Source Bulk Food pre-mix (Find your nearest The Source store here
  • 1½  cup water
  • 4 Tbsp olive oil
  • 2 Tbsp apple cider vinegar
  • ½ butternut pumpkin
  • 2 eggs*

*Option to omit egg for a slightly denser bread with better hold and moisture retention.


1.     Pre-heat oven to 180 degrees Celcius and take out as many loaf pans as you will need. Smaller loaf pans yield a taller loaf whilst larger loaf pans produce a shorter loaf.

2.     Use a food processor or a bullet-style blender to blitz up the butternut pumpkin, olive oil, apple cider vinegar and water until smooth.

3.     If adding eggs, add them now and blitz for only a second or two.

4.     Weigh 400g of the pre-mix.

5.     Combine the wet mix with the premix ingredients and stir quickly but ONLY JUST until the last little bit of flour has been moistened into the wet. Mixing any longer can result in denser, heavier loaves.

6.     Transfer immediately into a loaf pan to preserve as many bubbles as possible. Bake straight away for 45-50 min uncovered for a crustier loaf, or covered (leave room for it to rise) for a softer crust.

7.     Wherever possible, let the loaf sit before cutting into it for at least 20 min out of the oven just in case the middle has not fully finished setting.

8.     This loaf slices well and freezes well pre-sliced. It tastes amazing fresh out of the oven and delicious still once cool. A personal preference is warmed/toasted in the toaster first.

Real Blueberry Muffins

Did you know that when you buy a product containing blueberries such as cupcakes, pancakes, yoghurt, cereal or muesli bars, there's a good chance that there aren't any real blueberries in them....!

That's right! If you have a look at the ingredient list, you'll be surprised to find that the 'blueberries' are in fact an artificial blend of blueberry pieces, sugar, colouring, flavours and some sort of syrup or starch.

But fear not! Our Blueberry Muffins feature the real deal! They are gluten and dairy free, and made with no sneaky shortcuts; just an honest muffin that is super easy to make and packed with plenty of nutritional, guilt-free goodness.

What you'll need:
  • 1 cup dried blueberries
  • 1 cup almond milk
  • 2 cups almond meal
  • ½ cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp celtic or himalayan salt
  • 1 Tbsp raw honey
  • 3 Tbsp coconut oil
  • 1 tsp vanilla essence
  • 3 large eggs

Soak blueberries in hot water to soften them.
2. Preheat oven to 180° Celsius.
3. Line a 12 muffin tin with cupcake cases.
4. Mix all the dry ingredients in a bowl (almond meal, coconut flour, baking powder, himalayan salt). 
5. In another bowl beat the eggs,
then add in the coconut oil, almond milk, vanilla essence and honey. Mix thoroughly.
6. Add mixture in the two bowls (Step 4 and 5) together, and stir well.
7. Drain the blueberries from water, ensuring they have become soft, and add them to the mixture. Mix well.
8. Spoon batter into cupcake cases, about ¾ full.
9. Put muffin tin into oven and bake for approx 25-30 minutes until cooked through and brown on top.
10. Place on cooling rack and ENJOY!

Make this yummy Date Loaf :)

Make this scrumptious easy to make date loaf and enjoy a sweet treat full of goodness, one which is low in sugar, is dairy free, gluten free & best of all guilt free. ENJOY!

  • 1 3/4 cups of Almond Meal
  • 1/4 cup Brown Rice Flour
  • 1/2 tsp of Cardamon, Cinnamon, Nutmeg
  • 3 eggs (organic if possible)
  • 1/4 cup of honey
  • 10 Mejool dates
  • 1 cup boiling water
  • 1 tsp Baking powder (aluminium & gluten free)

  • In a bowl place pitted dates, boiling water and baking powder for 25 minutes
  • Grease a loaf tin with coconut oil & line the bottom with baking paper
  • Preheat the oven to 180 degrees
  • In another bowl place the almond meal, brown rice flour, spices
  • Beat the eggs separately and add to this mixture and stir well
  • Once the 25 minutes is up add the date mixture and stir well
  • Lastly, add in the honey and make sure all ingredients are combined well
  • Pour into the loaf tin and bake for 45mins - 1hr

Public Holiday Reminder

Who Will Train the Trainer?

After four weeks of back and forth on the leaderboard, we finally have a winner for the Myzone Trainer Challenge! It all came down to the Trainer Train Off last Thursday where our three Coaches competed for extra points (672 to be exact!) 

The competition required the Coaches to complete one lap of Crab Walk, one lap of Bear Crawls, 20 Push Ups, Burpee Broad Jumps and a two lap sprint to finish off, where the first person to ring the bell wins.

There was some controversy as Keiran finished the course first, but did not ring the bell! Kurt was the first person to ring the bell after completing the course, earning his team the extra points! 

Trainer Challenge Highlights

It was a close call between first and second place on the overall leaderboard, but those extra points was just enough to give TEAM KURT the VICTORY!! Congratulations to everyone on Team Kurt - Kristy R, Vince, Brad, Matt C, Tony W, Kristy P, Nick, Aaron and Cheryllyn for making the effort to score points for your Team! You now get to Train the Trainers!!

And a massive shoutout to everyone on Team Keiran & Alex for pushing that much harder in their workouts to achieve those Yellow and Red MEPs. Despite not getting the win, you'll be getting a Yellow & Red Zone-worthy workout from Team Kurt!

Sprint Workshop Wrap Up

The Sprint Workshops have now wrapped up with some great performances over the past six weeks. Here are some words from Coach Keiran...

Sprint Workshop Park Session

"I know many of you attended the workshops for different reasons, for myself as the trainer/coach I was looking for improvements in technique and final testing time.

Over the duration of the course I was really impressed with everyone's attitude and willingness to learn new skills. The courage shown when attempting the high hurdle hops and some difficult drills was inspiring.

I'd like to thank everyone who went outside their comfort zone and made the effort to attend before work or during lunch breaks in some quite warm weather.

Of course when final testing day came around it was raining, which made some of you nervous. However, I was confident we would still see improvements. Due to the fact we are only working over short distances the room for improvement is only small, this didn't change anyone's attitude and some great performances were displayed.

With the final results in I was blown away with the times..... every single person improved!!

The range of improvements were from 2/10ths of a second to nearly a full second....Wow.

I hope everyone took something away from the sessions that you can now apply to your own training. Thank you to everyone who participated, stay tuned for some more speed training events next year :) "


U8WC Bootcamp Details

Our Bootcamps are back for the Ultimate 8 Week Challenge! And this year, we're also including a Running Group!

To kick it off, we will be holding the Week 1 Fitness Testing on Tuesday the 26th at 7am AND 12:15pm down at the Botanical Gardens. 

And this is what's happening on Tuesday's throughout the U8WC:

Week 1 (Tues 26.9.17) - First Fitness Testing @ 7am & 12:15pm

Week 2 (Tues 3.10.17) - Bootcamp @ 7am

Week 3 (Tues 10.10.17) - Running Group @ 7am

Week 4 (Tues 17.10.17) - Bootcamp @ 7am

Week 5 (Tues 24.10.17) - Running Group @ 7am

Week 6 (Tues 31.10.17) - Bootcamp @ 7am

Week 7 (Tues 7.11.17) - Running Group @ 7am

Week 8 (Tues 14.11.17) - Final Fitness Testing @ 7am & 12:15pm

We encourage everyone to take part as it is a great way to check your progress when we re-do the Fitness Test again in Week 8 (and you get 20 individual points for completing each Bootcamp session!). Make sure you put your name down on the Registration sheet at the front desk if you're coming along.

All you'll need is your towel, water bottle and running shoes.

And if you can't make any of the Tuesday park sessions, we will still be running our normal 7am Fitbox & lunchtime Boxing Circuit here in the Studio :)


U8WC Starts 25th Sept!

The wait is almost over!! The Ultimate 8 Week Challenge starts on Monday the 25th of September!

What is it? The main focus is to set yourself a goal, and work towards achieving it by the end of the eight weeks. You will be earning individual points based on your class attendance, personal training sessions, completion of the Workout of the Week, attending Bootcamps/Running Group etc.. There will be a full points list displayed at FitClub.

Everyone will be also be working in teams and will have the opportunity to earn bonus points for their team. At the end of the eight weeks, we'll be looking for the Team and Individual with the most points who will be winning some awesome prizes!


You can add your Ultimate 8 Week Fitness Goal to the FitClub goal board! Make sure your goal is realistic and achievable in eight weeks :) 

You also have the option to have your body composition/ measurements taken so you can clearly see your progress during the Challenge. To book into a complimentary session, just speak to the FitClub Team.


But this year, we’re mixing things up for the U8WC...

Previously you had to register a team to take part in the Challenge, however this year we’ve picked names out of a hat and EVERYONE has been placed into a Team! Congratulations, you’re all contenders of the U8WC :) 

(And just because you're not a FitClubber yet doesn't mean you can't take part of the Challenge! Everyone is welcome :) U8WC Passes start from $295 and we will organise a team for you. To register, email the Team at info@fitclub.net.au

To kick things off, the Team that comes up with the most original team name will score themselves some extra points. You'll find pieces of blank paper next the Team list at the front desk which you can use to make your team poster. Don’t forget that there will be a reward at the end of the Challenge for the Team AND Individual with the most U8WC Points!

And new to this year's U8WC is even more opportunities to earn extra weekly points for your Team!

Our Planking Champions!

Some amazing personal bests were recorded last month for the Plank Challenge!

The improvement that we've seen from our members proves that if you keep pushing yourself beyond your limits, you will break out of your comfort zone and achieve some amazing things.

At the start of the month, Matt's personal best was 8:03 minutes. Just a week later, he planked for 10:18 minutes, and at the end of the month he pushed himself to 12 minutes and 22 seconds!

Neelam's abs of steel was a force to be reckoned with as well! Her initial plank time was 6:47 minutes, and by the end of the month she got to 11 minutes and 7 seconds! Both FitClubbers set new Club records, which have also earned them 100 FitClub Reward Points for their achievement! 

We love seeing you have a go at these Challenges - that's what they're all about :)
